Definition:
Italian toasted bread: Italian bread toasted and drizzled with olive oil, usually served with added garlic and chopped tomatoes.
Good, that is what I made last night, and that is how I identified it!  There was no measuring to speak of, but here is a list of ingredients I used. Organic Pan Bigio bread, purchased (I rarely bake so I am not going to pretend that I could bake something better than I could buy).  Even chain grocery stores have such great selections of artisan bread these days.  I topped the sliced bread with with garlic infused extra virgin olive oil, garden fresh cherry and grape tomatoes, garden fresh parsley, garden fresh chives, garden fresh oregano, shredded mozzarella, shredded fontina, and grated Parmesan. I tossed all of the toppings together and piled them high on the bread, previously toasted and drizzled with the olive oil.  I then broiled the entire mess on the middle rack in the oven for about 5-10 minutes.  By the way, when I use the term garden fresh I mean that it actually came out of a garden that belongs to me or a member of my family.
We also ate perfectly broiled NY strip steaks last night.  I topped them with a mixture of shredded mozzarella, shredded fontina, grated Parmesan, butter, and bread crumbs.  I finished them off under the broiler in the oven for 3 minutes to melt the cheese and crisp the bread crumbs. YUM!
