Sunday I took a day off from my diet. I know I know I sit there and complain about being stuck at 147 and then I take a day off. Well maybe in addition to my ramped up workout schedule a diet day off will shock my body as well. Besides, I only ate two of these! In fact, I had to get rid of the rest of them because I could not stop thinking about them on Monday morning!
As I have mentioned before, I am a pretty new player in the food blog arena. I realize that versions of these types of cookies have been baked and posted about by many food bloggers. I know I am not the first to think of these. But, I have decided to write about them anyway because I am not the world’s best baker and they actually turned out! My version may be difficult to find on the internet, I could not spot it. But, I will not say, impossible. I have seen super yummy looking versions of these on Cookies and Cups, Picky Palate, as well as Kevin and Amanda. From the first time I laid eyes on them, I have been dying to bake up my own batch. I really believed that I was clever when I thought to myself: “Instead of the Oreo in a chocolate chip cookie I will do a Nutter Butter in a chocolate cookie!” I googled this to see if anyone else had thought if the same idea. Holy Cow! It turns out that I am not the first person to come up with this idea! Shocker! So I went shopping and ended up with the following concoction. I think they turned out to be pretty delicious!
Deep Dish Cookie Stuffed Brownie Cookies (adapted from Cookies and Cups, Picky Palate, and Kevinand Amanda)
Prepare brownie mix as directed on box adding ¼ cup of flour. Lightly grease a 12 cup muffin (top) tin. Fill the bottom of each cup with batter place a cookie and chocolate in each cup on top in the middle of the batter. Top each cookie and chocolate square with a dollop of batter. Place in center of oven preheated to 325°. Bake for ~25 minutes. Remove from oven and let cool in pan for at least 5 minutes. Remove from pan and EAT! YUM!
