Happy Memorial Day everyone!
When I opened up this post this morning I was wondering if I’d ever taken any photos of the flag. Then I was like, “Yes, I took one only a couple of weeks ago!”

I normally don’t eat bread, especially white bread. But, Sam just got a job at Natural Grocers and he brought home this bread. I couldn’t resist so I built this Egg Patty, Cheddar, Avocado, Tomato Salsa, and Cilantro Aioli Sandwich. It was so worth every single herb dotted, cheesy, chewy bite of this white artisan bread!
Egg Patty, Cheddar, and Avocado Sandwiches with Tomato Salsa and a Cilantro Aioli
Ingredients
- Egg Patties
- 8 eggs
- 4 oz. plain Greek yogurt
- 1 tsp. kosher salt
- ½ tsp. fresh ground black pepper
- ¼ cup 30 g pickled sliced jalapeños
- Cilantro Jalapeno Aioli
- ½ cup cilantro
- 1/3 cup mayonnaise
- 3-5 slices pickled jalapenos
- 1 Tbsp. juice from pickled jalapeno jar
- Fixings
- 8 slices of your favorite crusty bread or 4 crusty buns
- 1 avocado thinly sliced and sprinkled with the juice from 1 lime
- 1 cup of your favorite tomato salsa drained
- 4 slices white cheddar cheese
Instructions

Preheat your oven to 375°F. Line an 8” x 8” x 2” baking pan with parchment paper.

Set the lined baking pan in a larger baking or roasting pan and slightly fill the outside “larger pan” with water (~¼ of the way up the side).

In the jar of a blender combine the eggs, salt, pepper, and jalapenos. Blend on high until well mixed and frothy (about 30 to 60 seconds).

Pour the contents of the blender jar into your lined pan.

Carefully transfer both pans to your oven and bake for 25 to 35 minutes (until set).

While the eggs are baking combine the cilantro, mayonnaise, pickled jalapenos, and jalapeno juice to a food processor or jar of a clean blender. Blend or process until smooth.

When the eggs are done let them cool slightly and then cut them into 4 equal patties and then build your sandwiches.

To keep the sandwiches warm and melt the cheese take four slices of the bread and top them each with a slice of cheese and ~ 3 Tbsp. each of the drained salsa.

Place them under the heated broiler in your oven on a sheet of foil for ~ 30 to 90 seconds. WATCH CAREFULLY it won’t take long for the cheese to begin to melt!

Cover the other 4 slices of bread with slices of avocado and drizzle each with the cilantro aioli.

Top the avocado slices and aioli with the egg patty and top that with the melted cheese and salsa topped slice.

Cut each of the 4 sandwiches in 2. Serve immediately and EAT!!!
