It’s nearly mid January! We should all be comfortable in our new wellness routines. LOL!!!
I’m never satisfied! My routines change daily. Sometimes hourly!
But, everyday, I try to chip away little by little. Workout, eat some whole foods, use my light box, take my vitamins, take in less caffeine, be kind, love more, spend more time with my family, etc……
I have a good feeling about 2016!I see a lot of colorful vegetables decorating my counter top, and kitchen table over the next 12 months!
Fava Bean, Green, Quinoa Salad
Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour
Servings 2 to 4 servings
Ingredients
- 160 g dried fava beans
- 192 g dried red quinoa
- 454 g organic spring mix salad
- 2 Tbsp. olive oil
- 1 Tbsp. Chianti red wine vinegar
- 2 tsp. coarse ground Dijon mustard
- S & P to taste
- 28 g crumbled Gorgonzola
Instructions

Cook dried fava beans according to the package directions (drain and set aside).

Cook Quinoa according to the package directions (drain, if necessary, and set aside).

In a large skillet wilt the greens (drain, if necessary).

In the jar of a small blender or food processor combine the oil, vinegar, mustard, and S & P. Blend until emulsified.

In a large mixing bowl combine the cooked beans, quinoa, and wilted greens.

Pour the dressing over the mixture and toss until all ingredients are well combined and thoroughly coated.

Divide salad into serving bowls.

Top each salad with a little Gorgonzola. EAT!!!
This salad would make a fantastic side dish to your dinner or a perfect protein packed lunch! It’s good! I know this because I took the time to put it into individual containers and pack it to work for my lunch. I don’t normally do this unless something is really really good!
