Since summer just started on Sunday I’ve decided to try to focus on simple pleasures this week and maybe that will carry on throughout the next 8 or 12 weeks.
Simple things help me with the harder things. Like, I just finished my meager breakfast but now I have my cup of super smooth cream puff coffee to look forward to savoring on the way to work.
I get excited to try complicated interesting recipes. But, I also love the experience of eating things like this fresh nectarine toast. I like that It’s simple and I can taste every separate ingredient in each bite.
After my coffee I know I have a crunchy and tart granny smith apple to took forward to along with creamy FAGE and salty almonds.
This evening I have love and laugh time with my family along with a juicy rib-eye my brother is going to cook.
Then back to bed with Ben and Will after a quick “I Love You” text to my busy son Sam. It’s going to be a great day!

Fresh Nectarine Toast
Ingredients
- 4 slices of your favorite bread I used Dave’s Killer, Thin-Sliced, Good Seed
- 7 oz. Greek yogurt 2% I used FAGE
- 1 small nectarine pitted and thinly sliced
- 2 tsp. honey
Instructions

Toast your bread to your desired brownness.

Divide the yogurt evenly between your four slices. Spread on thick.

Divide the sliced nectarine evenly among each slice of toast.

Top the yogurt with the slices.

Drizzle the sliced nectarine with the honey (about ½ tsp. per slice).

EAT!!!
