Today has been kind of a downer day. One of those days where even the color of the sky was off. So I was really in the mood for something comforting, food wise, but I did not want to ruin my diet. So when we got home I began to rummage around. This is what I came up with:
-1/4 c. oatmeal (quick cooking)
-2 cuties (peeled and sectioned)
-1/2 + 2 Tbsp. water
-1/4 c. toasted macadamia nuts
-tiny pinch ground ginger (to taste)
-tiny pinch ground cloves (to taste)
Combine oats, cuties, and water in bowl. Microwave for 2 minutes. Top with nuts and spices. Stir. Eat.
~350 cal. for the bowl. Kind of a lot, but you could cut the macadamia’s in half and save 100 cal. if you wanted.
Now, I have been battling a cold for a few days now, which is probably why I chose such big flavors. But it really worked. The creaminess of the cooked oats and the toasted nuts filled that comfort food void nicely. I was not sure I would like the warm citrus, but it was really nice with the spices. It all just really worked together. This was a winner! I believe some version of it shall go in my future cook book!
