Grilled Shrimp Caprese

An extremely simple, and simply delicious appetizer:

Ingredients:

-1 lb. raw shrimp (26-30 count, peeled)
-cherry tomatoes
-fresh basil (look for large leaves)
-mozzarella (1 inch cubes)
-1/2 c. balsamic vinegar
-S & P
-Olive Oil

Freeze mozzarella cubes for 1-2 hours.
Preheat gas grill. 
Pour balsamic vinegar in a small sauce pan.  Reduce vinegar, on medium heat, until slightly thick.  It will coat the back of a spoon and be reduced in volume by half.
I used metal skewers.  If you use wooden do not forget to soak them.
Wrap cheese cubes in large basil leaves.
Thread skewers with shrimp, tomatoes, and basil wrapped cheese.  Brush with olive oil. Sprinkle with salt and pepper.
Grill, on high heat,  three minutes on each side.  Drizzle with reduced balsamic vinegar.
