Store bought salad dressing should be illegal.There are exceptions in a pinch. And sometimes a pinch happens almost every single weeknight for me. But, when I slow down and make a simple vinaigrette it’s absolute magic on a dark, leafy, green salad!
Slowing down doesn’t mean I have to get out a hundred exotic ingredients and spend an hour boiling, chopping, and blending. I’m talking about slowing my mind down enough to realize that a fresh homemade vinaigrette takes less than 5 minutes. It’s just a couple of simple ingredients and a whisk or blender. In this case it’s exactly 3 ingredients plus some kosher salt and pepper. You don’t have to make an entire jar that will spoil in a week. I make 1 to 2 servings at a time. We’re about halfway through the week now! It’s time to celebrate by mixing up a couple of tablespoons of this vinaigrette and coat each leaf of your dinner salad in pure love.
I’m still dying over all the butter Epicurean sent me. I used their Tuscan Herb Butter in this dressing. It was a fantastic mellowing compliment to the lemon juice.
Lemon Tuscan Herb Butter Salad Dressing
Ingredients
- dressing:
- 2 oz. 56 g fresh lemon juice
- ½ tsp. lemon zest
- 1 oz. 28 g Tuscan Herb Butter (melted) I used Epicurean All Natural Tuscan Herb Butter
- ¼ tsp. kosher salt
- ¼ tsp. fresh ground black pepper
- salad:
- 10 oz. 282 g Power Greens (I used Simple Truth Organic)
- 8 oz. mini heirloom tomatoes halved
- 1 oz. 28 g shaved Parmesan
Instructions

Add the lemon juice, zest, melted butter, salt, and pepper to a small bowl or cup.

Microwave the mixture for 30 seconds.

Pour the hot mixture into the jar of a blender.

Blend the mixture on high for 20-30 seconds (until completely emulsified).

*Note: Dressing will separate and butter will harden in the fridge. It’s best if dressing is made fresh for each salad.

To prepare the salad place the greens in a large mixing bowl.

Pour the dressing over the greens and toss the salad until all the greens are evenly coated.

Divide the dressed salad among plates and evenly top all the salads with the tomatoes and cheese.
