Maple Prosciutto Breakfast Salad|JuliesJazz.comWhen Will was younger he would sleep in on the weekends, sometimes until 11. During that time Ben and I would relax, drink coffee, and catch up on things like blogs and news. Now Will wakes up around 7 almost every day.  On Sundays, Ben always gets up with him and lets me sleep in.  Today, for whatever reason, I wasn’t super tired so I got up with Will and let Ben sleep in.  I fixed him pancakes, a scrambled egg, and a peanut butter and jelly sandwich. While he ate the peanut butter and jelly sandwich we read “Peanut Butter & Cupcake” by Terry Border.  At one point Will pointed to the peanut butter character and said, “I’m eating that guy!” I melted!pb and jAfter that, Will ran down stairs and changed out the laundry. He does all of it except pour the soap! Then he filled up my Keurig K-cup drawer and loaded my pill organizer for the week. Since Will came along, and we quit partying, Ben really doesn’t ever sleep in. But I do! He has the coolest personality ever.  His imagination is incredible! I would love to get inside his little head for even just 5 minutes to try to see how it works.  He’s the only kid I know who doesn’t care about toys. He prefers hanging out with our dogs in the backyard or helping us do chores to working and action figure or racing a remote control car.Maple Prosciutto Breakfast Salad|JuliesJazz.com I want to thank Ben for sleeping in this morning because I had a great time with our little boy.  But, I also want to thank him for letting me sleep in all those other weekend mornings!
Maple Prosciutto Breakfast Salad|JuliesJazz.com I love our weekends. We’ve fallen into a routine on weekends.  I never thought I would enjoy a weekend routine because I thought that “no routine” was one of the things I loved about weekends. Turns out, having a weekend routine is making them better.

Maple Prosciutto Breakfast Salad|JuliesJazz.com Before I was actually getting nervous for the weekend, even before it started, because I knew it was going to fly by and nothing was going to get done and I would feel like it was wasted.  Now my weekend days are just part of the week as a whole.  Of course I enjoy my weekend days more because I get to spend more time with my family. Maple Prosciutto Breakfast Salad

Prep Time 10 minutes

Ingredients

  • ¼ c. pure maple syrup
  • 2 Tbsp. extra virgin olive oil
  • ½ tsp. minced garlic
  • ¼ tsp. kosher salt
  • ¼ tsp. fresh ground black pepper
  • 20 oz. mixed greens
  • 9 thin slices of Prosciutto
  • 4 eggs fried, over easy, sunny side up

Instructions

  1. Lay slices of Prosciutto on a parchment lined cookie sheet.
  2. Broil Prosciutto on top shelf of oven.
  3. Check Prosciutto once every 60 seconds until it is crisp (but not burnt).
  4. Remove Prosciutto from oven and set aside.
  5. Place salad greens in a large mixing bowl.
  6. In the jar of a blender combine the maple syrup, olive oil, garlic, salt, pepper, and one slice of the Prosciutto (broken into pieces).
  7. Blend contents until thoroughly combined (emulsified).
  8. Pour the dressing over the greens and toss until all the leaves are thoroughly coated.
  9. Divide greens among salad plates or bowls.
  10. Top each salad with a couple of slices of crisp prosciutto and a fried egg.
  11. EAT!!!
