I had to snap a couple of pics of my dinner last night after Ben saw what I was about to eat and said, “Jeez babe, that salad looks like you are a dieting pot smoker.” I had to laugh. But sometimes I get bored and have to jazz up my diet food. So I was preparing a typical salad for myself and spotted the bag of buffalo style popcorn out of the corner of my eye. Faux-croutons, I had to try it! Here is the breakdown: 1 bag butter lettuce, Litehouse brand blue cheese 2T, 2 poached eggs w/ S & P, 1/4 c. blue cheese crumbles, and last but not least 1 c. buffalo style seasoned popcorn. It was really good, I really recommend this crouton substitute. Although, popcorn is a little challenging to stab with a fork.
One thing I never do to a salad is ruin it with fat free dressing! I absolutely cannot stand the stuff! If I cannot afford the calories of a couple of tablespoons of full fat dressing then I will not use any at all. I will eat full fat vinaigrette though, it does not always have to be animal based. Litehouse blue cheese is my absolute favorite blue cheese dressing hands down. They have a flavor that features an Idaho blue cheese. Maybe all of the blue cheese they use comes from Idaho I am not quite sure. But, if the store I am shopping at has this particular kind I buy it because it just has more tangy cheese in it. Oh how I love my cheese!
