Preamble to the 2012 Russell Garden Bounty

Since I got such a late start on my own garden I am super excited to already be grazing out of the garden my dad and granny plantedat the end of April.  You name it, they probably planted it.  I have already eaten my way through a bunch of baby Bok Choy, two huge bunches of spinach, and a bunch of frisee.  For your viewing pleasure I included, in this post, just one of the many super simple super healthy personal, one skillet, meals I was able to toss together at the last minute featuring one bunch of the spinach bestowed upon me.
Quick & Sloppy-Yet-Savory Spinach Omelet

-10 to 16 oz. fresh spinach
-2 eggs (cracked into a cup and beat up with a fork)
-cooking spray (I use PAM)
-S & P
-2 T. prepared salsa (Your Favorite Brand)
-1 oz. slice havarti

Sauté spinach in medium, PAM sprayed, skillet until wilted.  Add eggs and cook for a couple of minutes (until almost all the runny egg is firm). Top with cheese slice.  Using a spatula try to fold up the mess and transfer it to a dish.  Top with salsa.  Eat It!

    YUMMY. I’d try that with black olives (or kalamata) and a diced tomato. With sour cream or marinara on top!
