I hate it when I let another person get to me. I expect my family to upset me because I love them. I care about the way they feel about me. Saturday I had the worst teaching experience ever! It wasn’t caused by one of the people in my class. It was the instructor following my class. She was so incredibly rude to me! And I haven’t been able to shake the feelings I had about the rotten, embarrassing, situation. They’ve been following me around all week. Tomorrow I intend to wake up with no more thoughts about it!Will walked in the bathroom this evening while I was taking a little nap. He discovered a pair of scissors in the drawer. He cut four or five chunks of i his own hair out down to the scalp before he decided he was finished. Then he came in my bedroom and told me to get out of the damn bed! I looked at him, sighed when I noticed his hair, then asked him why he did it. He told me cut it because it was crazy. Oh well! All three of the men I live with have gorgeous heads of hair. And all three of them have fast growing hair. In one month it will be grown out.
In the meantime I will curl up on the couch with a bowl of this comforting quinoa pizza bake. I will eat my troubles away in a healthy fashion.
Quinoa Pizza Bake
Ingredients
- 1 cup 192 g dry red quinoa
- 2 cups 16 fl. oz. vegetable stock
- ½ cup 142 g pizza sauce
- 4 egg whites
- ¾ cup 84 g Italian cheese blend (shredded)
- 1 can 64 g sliced black olives (drained)
- ½ cup 30 g pickled jalapeno slices
- ¼ cup 35 g thinly sliced mushrooms
- 16 slices 30 g turkey pepperoni
Instructions

Rinse the quinoa well in a fine mesh strainer.

Add the quinoa and vegetable stock to a medium sauce pan and bring the mixture to a boil.

Turn the heat down to medium and simmer for 20 to 30 minutes (check and stir the quinoa after 15 minutes) until most of the liquid has been absorbed and the quinoa is soft.

Remove the quinoa from the heat and pour it into a large mixing bowl to cool.

Preheat your oven to 350°F.

Line a 4” x 4” x 2” baking pan with parchment paper.

In a small mixing bowl combine the pizza sauce and egg whites. Wisk together until well combined.

Add ½ cup of the cheese, ¾ of the olives, and ½ of the jalapeno slices (chopped) to the quinoa. Stir to combine.

Add the pizza sauce and egg white mixture to the cooled quinoa. Stir to combine.

Pour the quinoa mixture into the parchment lined pan. Spread it evenly in the pan.

Top the quinoa mixture with the pepperoni, the sliced mushrooms, and the rest of the jalapenos (still in slices), the rest of the sliced olives, and the rest of the cheese.

Cover loosely with a little tin foil and bake for 50 minutes.

Remove the foil and bake uncovered for another 10 minutes.

Remove from the oven let cool for 10 minutes.

Slice, serve, and EAT!!!

Sounds terrific! Can you tell me the reason for egg whites rather than whole eggs? I to save the hassle and waste of separating the whites and yolks when I can get away with it 🙂

Heather, The ONLY reason I used egg whites was to save a few calories. So, by all means, use whole eggs. So, instead of 4 egg whites I would use 2 whole eggs. I hope this helps. And, Thanks for stopping by!
