Roasted Broccoli and Mushrooms with Fried Eggs

In these spotty (weather wise) spring months I will still roast items from time to time especially if it is cold outside.  I rarely boil anything other than pasta.  I can’t remember the last time I steamed something other than crab legs.  The microwave is for reheating leftovers from Mexican restaurants.  In my home food usually gets sautéed, broiled, roasted, or baked.  My poor conventional oven and cook top are like my dishwasher, terribly overworked.  I am sure my oven cannot wait until late spring. In late spring most days are warm enough to employ my Weber to take up some of the slack.  I cannot wait to skewer meats and marinate vegetables in preparation for those searing cast iron grates!

The above photos show, super easy to make, oven roasted broccoli and mushrooms.  I topped them with a couple of sunny side up eggs and called it dinner.  I think that I am way too into these seasoning packets.  I use them all of the time to season meats and vegetables because it makes everything so easy.  They are a crutch, really.  They are keeping me from learning more about seasoning.  Or rather, by purchasing them, I am keeping myself from learning more about seasoning.   OK, enough about cooking methods and psychology, here is the recipe:

Roasted Broccoli and Mushrooms with Fried Eggs
-16 oz. crimini mushrooms (cut into 1/4 Th’s.)
-2 bunches broccoli (stems mostly removed, cut into 1 inch pieces)
-1 pkg. dry Pad Thai seasoning mix.
-1/2 c. water
-2 Tbsp. soy sauce
-2 eggs
-PAM (or other cooking spray)
-S & P
Preheat oven to 375 degrees. Stir seasoning mix, soy sauce and water together.  Place mushrooms and broccoli into gallon size Ziploc bag, pour in seasoning mixture. Close bag and shake around.  Pour mushroom and broccoli mixture onto foil lined cookie sheet sprayed with PAM.  Bake 375 degree oven for 30 to 40 minutes. Fry two eggs (sunny side up w/ S & P).  Place desired amount of broccoli and mushrooms into bowl, top with eggs, EAT!

P.S. The Pad Thai seasoning had a nice little kick that I was not expecting.
