-2 lb. bag pre washed pre cut broccoli
-1 packet seasoning mix (use your favorite: ranch, pesto, garlic and herb, Italian…)
-1 c. water
-non-stick spray
Line a cookie sheet with foil (I am very sorry we are not baking cookies!). Coat with non-stick spray. Into a gallon size Ziploc pour ½ c. water and ½ packet seasoning. Seal bag and mix well. Pour in ½ the bag of broccoli. Seal the bag and shake until the broccoli is evenly coated. Pour out onto foil lined cookie sheet. Repeat with remaining ingredients. The entire bag of broccoli should fit on the cookie sheet. Bake at 400° for 30 to 40 minutes. EAT! [~400 cal. If you want to eat all two lbs. (calorie count may change depending on what seasoning you use, but not by much)]. Although it takes a long time to roast vegetables, trust me, the flavor it worth it!
Tomato Candy
-2 pints cherry or grape tomatoes
-non-stick spray
Line a cookie sheet with foil (Again, I am very sorry we are not baking cookies!). Coat with non-stick spray. Slice tomatoes in half, arrange cut side up in cookie sheet. Bake at 200° for 3-4 hours. Eat them; their flavor is so concentrated they are almost as sweet as candy! ~150 calories if you want to eat the whole pan full! And they are so good you just might!
Oven Baked Vegetable Omelets
-1 lb. fresh spinach
-1 pint grape tomatoes
-16 oz. white button mushrooms
-4 slices medium cheddar cheese
-4slices provolone
-2 eggs + 4 egg whites
-1/4 c. skim milk
-1 packet vegetable soup mix (I used Knorr)
Sauté mushrooms, tomatoes, and spinach just until barely soft and wilted. Spread evenly into 9 X 13 pan coated with non-stick spray. Beat eggs and egg whites. Add milk and vegetable soup mix to eggs. Mix well. Pour egg mixture over vegetables in pan. Bake in 375° oven for 40 minutes. Top with 8 slices of cheese. Bake 10 min. more to melt cheese. Remove from oven; let rest for 10 to 20 min. EAT! I get 4 servings out of this for ~350 cal. each. Or you could down the whole pan for ~1400 cal. Not too shabby for an entire casserole! I doubt I could eat an entire pan of my mac and cheese for much less than 14,000 cal. I have never really added it up though; the thought of it scares me too much!
The veg. soup mix adds great flavor (no need for S & P), and the bursts of flavor from the tomatoes are delectable!
Apples and Oats
-1/2 c. quick cooking oats
-1 apple (I like honey crisp or granny smith) cut into 1 inch. cubes
-1 c. water
-a few dashes ground cinnamon
Combine oats, apple, and water in a bowl and microwave for 3-4 minutes. Sprinkle with cinnamon. EAT! No sugar necessary as the cooked apples sweeten the oats plenty. Only ~250 cal.
Avocado on Toast with Salt
Just as you see it, YUM! ~ 230 cal. For ½ avocado and one slice toast. I used Ezekiel bread.

So that’s what a typical day has been looking like for me lately. Now that I have laid it all out, it doesn’t look half bad. Definitely colorful, and it all tasted excellent!
