The Last Suppers

Ben and I began a stint of healthy eating on Monday January 2nd, as I am sure many Americans did.  I do not really mind this as there are many healthy things I love to eat.  When we go on these kicks my contribution to my body is to try to cut out white flour based items, minimize processed foods, and cut out all white and processed sugar.  I also try to keep around 1600 calories per day.  One thing I never stop eating is cheese.  I do not go low fat or fat free on cheese.  I eat whatever cheese I want!  Hard, soft, creamy, you name it!  I do try to keep my cheese to 1-2 oz. per day though.
Enough about that, what I really wanted to write about in this particular post is our last two suppers. Not one last supper on the night of January 1st, but two last suppers.  We indulged in one last supper on the Dec 31st2011 and one last supper on Jan 1st 2012.  We tried to get it all in, everything we thought we would miss over the following months.
Now there were more items than I am writing about here.  I am only writing about the items I actually prepared.  There were many store bought processed items we indulged in during those two days.  Included in the decadent last days was: More Molten Lave Burgers (filled with an array of cheeses), Chocolate Cookie dough Cupcakes, a Trio of Steaks (one rib eye, one NY strip, and one tenderloin) finished with crumbled Gorgonzola, and Spaghetti Carbonara.  Oh, and Garlic and Brie! This dish took me to nearly 200 lbs. at one point in my life (along with gallons of red wine)!  I used to eat it every weekend, and would allow Ben only tiny bites! It is hard to describe my love for brie. I could eat it with a spoon, and I have!   I wish there were more, but there is only so much two humans can consume in two days.  Trust me, I know.
I did not have recipes for any of these items except for the cupcakes, but I will list ingredients I used and try to remember amounts.
Molten Lava Burgers:
Meat used-fresh ground chuck (I use my food processor)
Cheeses used-jalapeno jack an artisan blend, Kraft American (deli style), provolone Sargento, medium cheddar Tillamook
Buns- the terrible soft white kind
Cupcakes:
Recipe adapted from the Kevin and Amanda blog. I love this blog! I followed the recipe for the cookie dough filling and the frosting. But I used a devil’s food cake box mix for the cake.  I believe this accounted for the filling to be overdone.  They were still decadent, and the brown sugar in the frosting gave it that classic cookie dough texture.  There are so many clever people out there in the world!
Steaks:
Seasoned with Canadian steak seasoning, grilled to medium rare, and topped with crumbled Gorgonzola.
Spaghetti Carbonara:
I have never used a recipe for this, I have just looked at many recipes then came up with my own combination.  Like my macaroni and cheese, it always turns out different.
Butter and olive oil
Thin spaghetti
Crimini mushrooms
Thick cut bacon
Heavy cream
Parmesano Reggiano (a must)
Egg yolks
S & P
Garlic and Brie:
Brie
Roasted Garlic (so it will spread)
Baguette (sliced thin and toasted)

    My favorite brie:

    Preheat oven to 400 and lay out a sheet of (barely thawed) phyllo dough. Brush on a very light layer of melted butter. Do that three times so you have three layered sheets. Plunk a round of brie cheese on it. Make a little pile of walnuts and dried cranberries on top of the cheese. Drizzle that with a spoonful of honey. Put another sheet of phyllo over the top, then wrap the package up snugly. Bake 10 minutes at 400 and turn heat down to 350. Bake till golden browned all over. Serve with toasted sourdough and roasted garlic and fresh sliced apples.
