A couple of weeks ago Ben and I ate grilled chicken salads for dinner. They were heaping with marinated, grilled chicken breast meat, romaine lettuce, Chiz’s Ranch dressing, and a handful of Mexican cheese blend. Those salads really hit the spot, and got Ben and I talking about all the different salad combinations we could come up with. Ben was relating our conversation to the new winner of “The Next Food Network Star”. “The Sandwich King” is what he calls himself. And his motto goes something like this: Any sandwich can be turned into a meal, and any meal can be turned into a sandwich. So Ben said (semi-jokingly),”I will be The Salad King.” Then using the same Sandwich King concept we proceeded to come up with a long list of yummy salad possibilities.
You see, Ben and I are billowy white processed carb addicts. Our favorites include fluffy white bread, toasted and smothered with creamy peanut butter. Any type of white flour and/or semolina pasta topped with you name it! And PIZZA! No room for whole grains in this house!
Ok, so we do not deny ourselves any of these. But, we do try to limit them. Hence, The Salad King concept. So, here are a few of the ideas we came up with (possible names & possible ingredients):
–The Philly Cheese steak Salad(sirloin strips, Lawry’s Mesquite marinade, red onion, yellow pepper, olive oil, butter, S & P, ½ and ½ , sharp cheddar, mozzarella, bag of Italian salad mix, and Chiz’s Ranch dressing)
–The Reuben Salad (corned beef, homemade 1000 Island dressing {mayo, ketchup, red onion, HB egg, dill pickle, S&P}, sauerkraut, Swiss cheese, rye bread croutons, butter, and spring salad mix)

-The Chicken Parmesan Salad

-The Chicken Malibu Salad (Chicken Breasts, Lawry’s Teriyaki w/pineapple juice marinade, dressing made with: {mayo, Dijon, soy sauce, and a touch of honey}, bag of just lettuce, fully cooked ham chunks, canned or fresh pineapple chunks, Swiss & provolone cheese)
I realize that versions of these have probably already been thought of and prepared. But I can’t wait to try the Ben and Julie renditions of them!
P.S. The photos depict three of the salads we have already tried.
P.P.S. They are the only ones on the list including the ingredients we actually used.
